MANILA, Philippines?Perry Quimbo came home from the US to play in the Philippine Basketball League (PBL), and was toying with the idea of becoming a lawyer. Instead, he ended up managing a resto-bar.

How did that happen? Blame it on Quimbo?s hard work and impeccable work ethic. ?I?m a hands-on guy,? he shares. It also helps that he?s friendly and accessible.

On Oct. 19, Quimbo will formally open ?Dillingers 1903,? a swanky steak-and-brew resto-bar on the third floor of Greenbelt 3, Makati City. It offers continental dishes and a wide array of wine, liquor and imported beer.

Restaurant circuit

Quimbo isn?t new to the restaurant circuit. Years ago, he was the operations manager of Piedra at the Fort. Then came Bugsy?s Bar & Bistro on Julia Vargas Avenue, Pasig City.

Assisting Quimbo at ?Dillingers 1903? is Veronica Schlageter, a lithe Fil-Swiss beauty with a degree in hotel and restaurant management from the Ecole Hoteliere de Lausanne in Switzerland.
