BANANAS are rich in potassium but they can be boring to eat. Here?s a wholesome recipe that transforms bananas into a tasty treat: Banana raisin muffins. They?re great for school-time snacks?or even for after-school eating.
Banana Raisin Muffins
3 cups all-purpose flour
1 tsp salt
2 tsp baking soda
2 tsp baking powder
2 c sugar
2 c mashed ripe bananas
4 eggs, slightly beaten
1 ? c vegetable oil
2 c raisins, lightly dusted with flour
Preheat oven to 375?F. Line two 12-cup muffin pans with paper baking cups.
Sift together flour, salt, baking soda, baking powder and sugar.
In another bowl, mix mashed bananas with eggs and vegetable oil. Combine with the flour mixture. Fold in raisins. Pour into prepared baking cups, filling each cup about ? full. Bake for 15 to 20 minutes or until tops are golden brown. Makes about 24 muffins.
